A family is in need of a full-time, live-out estate chef, on Shelter Island (Long Island area) in New York. This position is responsible for all food production required by the Principal, including: three meals per day, parties, and special events located in Shelter Island, NY. The estate chef will develop all menus and monitor food budgets for the household. This position reports to the chief of staff.
Responsibilities include, planning all menus for the residence, maintaining economical and technically correct budgeted food cost goals, implementing corrective measures as necessary to help assure that budgeted food cost goals are met, managing the requisition of products and other necessary food supplies, ensuring that high standards of sanitation, cleanliness, and safety are maintained throughout all kitchen areas at all times, evaluating food products to assure that quality standards are consistently attained, interacting with the principal to ensure the food production consistently exceeds the expectations of principal and guests, developing policies and procedures to enhance and measure quality; continually updating photo menus to assist with a consistent product, establishing and maintaining a regular cleaning and maintenance schedule for all kitchen areas and equipment, supporting safe work habits and a safe working environment at all times, performing other duties as directed, having the ability to interact positively with management and co-workers to promote a team effort and maintaining a positive, professional approach, ability to produce a high volume of work in a timely manner, which is accurate, complete, and of high quality, flexibility to travel to other residences as needed, and ability to work with estate team to prep and stock guest residence kitchens as needed.
Job requirements include having a strong command of the English language, superior communication skills (both written and verbal), exceptional organizational skills and dedication to responsibilities., ability to be innovative and manage specialty diets., manage the production of a high-end events, 8+ years of private chef experience is required, create a variety of menus based on seasonal and preferences of principal, flexibility in scheduling with willingness to work long hours, experience working in high stress, fast-paced environments where the utmost discretion and confidentiality are required, polished, poised and professional in both mindset and manor; use of utmost discretion at all times, willingness to adapt to an ever-changing and often unstructured environment; ability to manage challenging personalities and high-stress environments, must be computer savvy with proficiency in both Mac and PC systems, including office, Internet and email, proactive and driven attitude; willingness to succeed at all costs, strong interpersonal skills, excellent problem resolution skills, outstanding communication skills and active listening skills, general understanding that all aspects of this position require a willingness to be flexible and ability to pivot at a moments notice.
